Background: Based on Demographic Survey data, Indonesia is currently entering the aging population phase, where the proportion of the elderly population is increasing. Hypertension is a common problem experienced by the elderly. The global target for non-communicable diseases is to reduce the prevalence of hypertension by 33% between 2010 and 2030. Spinach is one of the most common vegetables in Indonesia. Spinach is rich in nutrients such as angiotensin, peptides and folate which can help lower blood pressure. For people with hypertension, spinach is an alternative solution to help maintain blood pressure. The type of additional food that can be given is a modification of various local foods, namely green spinach which can be made into flour so that it can be processed into everyday foods such as today. The use of green spinach as a local food and vegetable to increase the nutritional content of the product. The purpose of selecting spinach into flour as a product is to increase the shelf life of spinach, add product variety, and increase consumer interest, especially the elderly, in reducing hypertension. This activity employed the Practical Rural Appraisal (PRA) method, which involved processing spinach, from theory to practice, into flour, which can be used to make various foods by elderly Posyandu (Integrated Service Post) cadres. The results of this activity made spinach more appealing to the elderly for consumption and hypertension management. The conclusion of this activity is that spinach flour modification is feasible because it can easily be used to make various types of processed foods.
